Techniques Classes Are The "Stock" Of Your Skills
Invest in your cooking foundation by acquiring new cooking skills, enjoying wonderful food and sharing kitchen comaraderie. For the most entry-level student, Basic Cooking 101 will help novices gain "cooking legs". For students ready to kick things up a notch, our signature 5-day course, Basic Cooking Techniques, covers knife skills, soups & stocks, mise en place (kitchen organization), braising, roasting, poaching, and a myriad of other fundamental skills. Beginners as well as cooks with kitchen familiarity will enjoy acquiring a solid culinary foundation in our classes.

Recipe: Pumpkin Nut Bread
Every Wednesday evening and Saturday morning, CSR is at the Boulder County Farmers' Market. Pick up free recipes, try scrumptious seasonal samples and gather advice for cooking with ingredients fresh from the market. The Wednesday market runs through October 3rd, and Saturdays until November 3rd.

Ingredients:

½ cup butter
1 cup sugar
2 eggs
1 cup pumpkin purée
¼ cup milk
1 2/3 cups flour
1½ teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon cloves
½ teaspoon salt
1/3 cup chopped walnuts
½ cup raisins, tossed in flour

Method:

  1. Preheat the oven to 350°F.
  2. Cream the butter and sugar together in a mixer until the sugar is dissolved and the butter is fluffy. Add the eggs, one at a time. Stir in the pumpkin and milk, scraping the bowl to make sure the ingredients are well mixed.
  3. In a smaller bowl, stir the flour, baking powder, spices, and salt together with a fork.
  4. Turn the mixer on low and add the flour mixture. Stir until it is just incorporated. Fold in the walnuts and raisins.
  5. Pour the batter into small loaf pans and bake for 15-20 minutes, until the top is firm and a toothpick comes out clean.
