The Big Beer Week

CSR is 'hoppy' it's September! If you haven't already, try your hand at cooking with beer or pairing it with your favorite dishes. Beer has rich, dynamic and complex flavors that can bring a new sparkle to any recipe or heighten the flavor of a meal. The staff at CSR has been cooking with beer this month and you can, too! Oh My Ganache...
Pastry Track Bake Sale is Friday, October 2nd

Wander through a wonderland of sweets and pastries baked by our professional Pastry Track students. We'll be selling fresh-baked treats from noon until 2 pm on Friday, October 2nd. The Bake Sale is at Culinary School of the Rockies in south Boulder and students will be baking throughout the afternoon.

Our Bake Sale only happens a few times a year, so join us for this chance to admire and enjoy all kinds of freshly baked treats made especially by our Pastry Track class.

Join us for dinner – CSR's Dining Room is a unique student-run, bistro style restaurant experience. Support our professional Chef Track students and taste a delicious expression of their talents. The menu includes your choice of prix fixe, three-course dinner (each course has three options) paired with wine. Each dish features, local and seasonal ingredients and will be served in our intimate dining room setting.

Recipe: Cheesy Beer Scones

Enjoy these scones with brunch or dinner, they will be sure to win any beer lover's heart!

Makes about 14

Ingredients
2 ¾ cups all purpose flour
1 Tbsp sugar
2 tsp baking powder
¾ cup minced fresh chives
1 cup (packed) coarsely shredded extra-sharp cheddar cheese
¾ cup (or more) chilled beer, such as an ale, lager or pilsner
2 large eggs
1 Tbsp vegetable oil
2 tsp Dijon mustard
Sesame seeds

Method
  1. Preheat oven to 425°F. Sprinkle a baking sheet with flour. Whisk first 3 ingredients in large bowl. Stir in chives and cheese. Whisk ¾ cup beer, 1 egg, oil, and mustard in small bowl. Gradually add beer mixture to dry ingredients, tossing until moist clumps form and adding more milk by tablespoonfuls if dough is dry. Turn dough out onto lightly floured surface; knead just until dough comes together.
  2. Pat out dough to 1-inch-thick round. Using 2 ½-inch-diameter cutter, cut out scones. Gather dough scraps and repeat. Transfer to prepared sheet. Whisk remaining egg in small cup; brush over scones. Sprinkle with sesame seeds.
  3. Bake scones until golden on top and tester inserted into center comes out clean, about 14 minutes. Cool scones on sheet 5 minutes. Transfer to basket. Serve warm and enjoy!
*For an extra treat, add some cooked, crumbled bacon into the dough of these scones.
