Recipe: Grilled Rosemary-Chile Flat Bread
Every Wednesday evening and Saturday morning, CSR is at the Boulder County Farmers' Market. Pick up free recipes, try scrumptious seasonal samples and gather advice for cooking with ingredients fresh from the market.

Serves 6-8

Ingredients:

1 oz. dry yeast
1 tsp. sugar
1¼ cup warm water
4½ cups all-purpose flour
1 tsp. salt
olive oil
2-3 tsp. cut chiles
2-3 tsp. rosemary, dried or fresh

Method:

  1. In a large bowl, combine the yeast, water, and sugar. Let it sit to proof.
  2. Sift the flour. Combine sifted flour and salt. Begin adding the flour mixture to the bowl a little at a time. Knead the mixture until smooth. This may require additional flour.
  3. Cover and let the dough rise 20-30 minutes.
  4. Punch down and divide the dough into 6-8 pieces. Flatten the dough and dimple the dough with your fingers.
  5. Brush with olive oil and sprinkle with chiles and rosemary.
  6. Place on a grill or griddle and cook until golden brown, about 10-12 minutes. Serve.
