Recipe: Bar-B-Q Beer Can Chicken
Every Wednesday evening and Saturday morning, CSR is at the Boulder County Farmers' Market. Pick up free recipes, try scrumptious seasonal samples and gather advice for cooking with ingredients fresh from the market.

Serves 4

Ingredients:

1 free range roasting chicken
½ can of beer, opened
1 tablespoon (packed) brown sugar
1 teaspoons garlic powder
¾ teaspoons onion powder
1 teaspoon oregano
1 teaspoon chili powder
½ teaspoon cayenne pepper
Olive oil
Salt to taste
Pepper to taste

Method:

  1. Rinse chicken and pat dry.
  2. Mix brown sugar with dry spices.
  3. Rub the chicken with olive oil and then rub in spices. Season with salt & pepper to taste.
  4. Hold the chicken upright and place it on top of the beer can so that it easily slides into the cavity. Use the legs to balance the chicken upright on the grill.
  5. Stand the chicken over medium high heat away from direct flame. Close the lid and grill the bird for 1 hour to 1 hour 15 minutes – or until golden.
  6. Transfer the chicken (minus the beer can) to a warm platter and let it rest at least 5-10 minutes before carving. Serve.

Food Trivia

What does "al dente" mean?

Answer:
Literally "to the tooth," which is how to test pasta to see if it is properly cooked. The pasta should be a bit firm, offering some resistance to the tooth, but tender.
