Culinary Skills
Tuesday Evenings Starting September 16th

If your dreams of becoming a spectacular home cook, personal chef, or bed & breakfast owner have been on the back burner, now is your opportunity to turn the flame on high and move that dream forward. Ignite your passion with CSR's 20-week Culinary Skills course designed for individuals who are passionate about food and cooking and committed to discovering and learning new methods and techniques.

Working side-by-side with our Professional Chef Instructor, students will spend 4½ hours, one evening a week (90 hours total) in our professionally equipped commercial teaching kitchen. Explore a logical sequence of topics, including professional knife skills, sensory awareness, stocks and soups, sauces, vegetables, fish, poultry, meats, wine and cheeses.

Culinary Skills begins Tuesday, September 16, 2008. Tuition is $2,485. Enrollment requirements: Completion of Knife Skills and Basic Cooking Techniques or similar courses highly recommended.

Recipe: Sesame Sugar Snap Peas
Visit our Chef at the Market every Wednesday evening and every Saturday morning at the Boulder County Farmers' Market. Watch demonstrations, pick up free recipes, and gather advice for cooking with seasonal ingredients fresh from the market.

Serves 6

Ingredients:

1 pound sugar snap peas, stringed
1 teaspoon toasted sesame seeds (black and white)
1 tablespoon sesame oil
Salt and freshly ground black pepper, to taste

Method:
  1. In a large saute pan over medium high heat, heat sesame oil and quickly saute sugar snaps until crisp tender and bright green.
  2. Lightly season with salt and pepper and transfer to a bowl. Sprinkle with toasted sesame seeds and serve.
