RECIPE: Salsa Fresca
Visit our Chef at the Market every Wednesday evening and Saturday morning at the Boulder County Farmers' Market. Pick up free recipes, try scrumptious seasonal samples and gather advice for cooking with ingredients fresh from the market.

Ingredients:

1 lb tomatoes, peeled and chopped
½ cup onion, finely chopped
1 jalapeno, finely chopped
2 tsp olive oil
1 tsp vinegar
1 tsp lime juice
1 tsp dried oregano, crushed
½ tsp salt

Method:

In a medium bowl, combine tomatoes, onion and jalapeno. Add olive oil, vinegar, lime juice, oregano and salt. Mix well and let stand for 2 hours to blend flavors. Makes about 2 cups.

Answer:
The watermelon is planted from seeds or seedlings, harvested, and then cleared from the fields like other vegetables. Cousin to the cucumber and kin to the gourd, watermelons can range in size from 7 to 100 pounds.
