Recipe: Herbed Sugar Snap Peas

A simple, fresh and fast summer side dish. This pairs nicely with a piece of smoked salmon and baguette from the market. Come and try a sample of this recipe at our Farmers' Market booth in Boulder this Wednesday.

Ingredients:
1 pint fresh sugar snap peas
1 tsp olive oil
1 tsp fresh thyme or other herb, chopped
1 pinch salt and pepper to taste


Method
  1. Heat oil over medium–high flame.
  2. Add the snap peas. Stir or toss for 2 minutes in olive oil.
  3. Add the fresh herbs. Cook for another 1 minute, stirring once or twice.
  4. Season with salt and pepper and serve.

Dorian's Quick Tip:

To store fresh herbs, put them with stems attached in small jars or vases filled with water out on your kitchen counter. Herbs like to be well–watered, but not cold.
