Recipe: Strawberry Rhubarb Crisp
Serves 4 – 6

Ingredients:

Fruit Layer
4 cups strawberries, hulled and quartered
4 cups rhubarb diced
1 cup sugar
2 Tbs. cornstarch

Streusel Topping
¼ cup brown sugar
½ cup flour
1 cup oats
½ tsp. salt
3 oz. cold butter, cubed

Method:

  1. Combine all ingredients for streusel and place in a mixer; mix with a paddle on medium speed until crumbly.
  2. Toss all fruit together and evenly coat with sugar and cornstarch, immediately place in desired dishes and top with streusel, bake in a preheated 375-degree oven until brown and bubbly.

Answer:
The rhubarb or "pie plant" stalks can grow up to two feet long and are the only edible portion of the plant — the leaves contain oxalic acis and can be toxic. Because of its tartness rhubarb is usually combined with a considerable amount of sugar.
