Recipe: Bulgur Pinto Burgers with Citrus Mayonnaise
Join our Chef at the Market on Wednesdays and Saturdays to sample flavorful recipes.

Yield: 4 burgers

Ingredients:

½ cup bulgur
1 cup water
1 Tbs. olive oil plus more for brushing patties
½ cup yellow onion, small dice
1 cup canned pinto beans, rinsed and drained
2 Tbs. soy sauce
¾ cup walnuts
2 garlic gloves
½ cup cilantro, packed
1 tsp. ground cumin
¼ tsp. cayenne
salt and freshly ground black pepper

Mayonnaise
¼ cup prepared mayonnaise
½ tsp. lime or lemon zest
1 tsp. fresh lime or lemon juice

Method:

  1. In a large saute pan over medium heat, cook onion until soft. Add bulgur and water, cover, and reduce heat to low. Cook for 15-20 minutes, or until all the water has been absorbed by the bulgur. Allow to cool and transfer to the bowl of a food processor.
  2. Pulse bulgur mixture, pinto beans, walnuts, garlic, cilantro, cumin, cayenne, and season with salt and pepper. Form into four rounded ½ cup patties and chill for at least ten minutes.
  3. Stir together mayo, zest, and juice.
  4. Preheat grill, or pan on stovetop, and brush patties with olive oil. Cook burgers until golden on both sides, approximately four minutes per side.
  5. Serve burgers with a dollop of citrus mayonnaise and any other accompaniments that you like (ie. sliced tomato, greens).
