Recipe: Indian Spiced Lentils with Kale
Join our Chef at the Market this Saturday to sample this delicious recipe.

Serves 6-8

Ingredients:

2 cup lentils, rinsed and picked over
1 Tbsp salt
8 cup water
3 Tbsp olive oil
2 tsp coriander seeds, toasted and ground
2 tsp cumin seeds, toasted and ground
1 tsp red pepper flakes
2 garlic cloves, minced
1 Tbsp fresh ginger, minced
salt and freshly ground black pepper, to taste
2 lb. kale, stemmed and leaves coarsely chopped

Method:

  1. In a large saucepan, bring lentils, 1 Tbsp salt, and water to a boil.
  2. Reduce heat and simmer until lentils are tender, 20-25 minutes. Drain and reserve water.
  3. In a large saute pan, over medium heat, add all spices, garlic, and ginger and saute for 2-3 minutes, stirring frequently.
  4. Add prepared kale and saute until it just begins to wilt. Season with salt & pepper.
  5. Add cooked lentils and serve.
