Spring-time is when most of us feel inclined to cook flirty, exotic meals to entertain friends or simply to feel like we're on a vacation. Join us for Cookin' Cajun or Dim Sum and learn to create dishes like Crawfish Bisque with Roasted Sweet Pepper Cream, Pan-Seared Tuna Carpaccio with Red Onion Marmalade, or Shao Mai (Steamed Shrimp Dumplings).

Joan Brett to be Inducted into the Boulder County
Hall of Fame

Joan Brett   Joan Brett the founder and director of Culinary School of the Rockies is one of six business leaders (and the only woman) to be inducted into The Boulder County Hall of Fame on May 1, 2008 at the Radisson Hotel in Longmont. Please join CSR at the luncheon to help honor Joan. Cost is $50 per person.

Recipe: Arugula Pesto
Opening day at the Boulder County Farmers' Market was a smashing success. Customer turn out was so fabulous that our recipes and pesto samples were snatched up fast. Visit us this Saturday and sample a European favorite — Radish Butter with Lemon and Parsley.

Ingredients:

2 cups packed arugula leaves
½ cup walnuts
½ cup fresh grated parmesan cheese
½ cup extra virgin olive oil
5 cloves garlic

Method:

  1. Brown garlic with skins on in a skillet over medium high heat until lightly browned, about 10 minutes. Remove garlic from pan, cool and remove skins.
  2. Lightly toast the walnuts in a pan over medium heat.
  3. Combine the arugula, walnuts, roasted garlic in a food processor. Pulse while drizzling olive oil into the processor.
  4. Scrape mixture into a bowl then stir in the parmesan cheese.
  5. Mix pesto with freshly prepared pasta of your choice or serve with crackers, bread or crostini alone or with goat cheese.
