Recipe: Sweet Onion Jam
Slow-cooked onions become soft, sweet and creamy and make for a perfect topping served on toast crisps. Join Chef Michael Montgomery at the Market this Saturday to sample this delicious recipe.

Ingredients:

2 lb. sweet yellow onions, cut in half and thinly sliced
3 Tbsp. unsalted butter
½ Tbsp. red pepper flakes
2/3 cup packed light brown sugar
1/3 cup red wine
1/3 cup balsamic vinegar
1 tsp. kosher salt

Method:

  1. In a large saucepan over medium heat, melt butter and add red pepper flakes.
  2. Add onions and cook until translucent
  3. Add remaining ingredients and bring to a boil.
  4. Reduce heat to low and simmer for about 40 minutes, or until syrupy.

What mushroom is named after a marine mollusk?

Answer:
Oyster mushrooms. The oyster mushroom, or Pleurotus ostreatus to use its scientific name, is a fan-shaped fungus that does vaguely resemble an oyster. Juicy and with a good flavor, it is eaten raw in salads or cooked in stir-fries.
