Recipe: Honey Lime Thai Pork Chops
Serves 4

Ingredients:

2 lbs. pork chops, either 4 thick (1") pork chops or 8 thin (½") pork chops
1 head garlic, broken into cloves and peeled
3 Tbs. sugar
1/3 cup Asian fish sauce
3 Tbs. honey
2 Tbs. freshly squeezed lime juice
2 Tbs. Asian sesame oil
1 Tbs. grated fresh ginger
2 tsp. salt
1 tsp. freshly ground pepper

Method:

  1. Make 1-2 cuts in the fat side of each pork chop to keep it from curling during grilling. Arrange the chops in a baking dish and set aside.
  2. Combine the garlic and sugar in a food processor and process to a paste. Work in the fish sauce, honey, lime juice, sesame oil, ginger, salt, and pepper. Spread the mixture over both sides of the chops. Cover and marinate in the refrigerator for 1-2 hours.
  3. Preheat grill to high. Oil the grill grate, and then place the pork chops on the grill and cook until nicely browned on both sides and cooked to your liking.
  4. Transfer to a plate and serve.

What popular Chinese ingredient is found in puddings, soups, and teas?

Answer:
Tapioca. Made from the root of the cassava plant, this starch is an important ingredient in Asian cooking. Although originally native to the tropical regions of South America, tapioca starch is used extensively in Chinese cooking as a sauce thickener (in the west you'll often find cornstarch used as a substitute). Tapioca is also used to make puddings and Asian bubble teas.
