Recipe: The Best Vanilla Cupcakes
Makes 24 cupcakes

Ingredients:

12 tablespoons (1½ sticks) unsalted butter, softened
1½ cups sugar
2 cups all purpose flour
1½ teaspoons baking powder
¼ teaspoon salt
6 large egg whites (3/4 cup)
¾ cup milk
1 teaspoon vanilla extract

Frosting:
2 Egg Whites
1½ Cups Sugar
1/8 tsp salt
1/3 cup water
2 tsp light corn syrup
1 tsp vanilla extract

Method:

  1. Preheat to 350 degrees. Butter or line cupcakes pans.
  2. In a large bowl, beat butter and sugar for about 5 minutes, until light and fluffy. Stir together flour, baking powder and salt. Set aside. Combine egg whites, milk and vanilla extract. Add 1/3 of the flour mixture to the butter mixture then add half the milk mixture. Continue to alternate beginning and ending with flour mixture. Scrape the bowl and beater often.
  3. Pour the batter into prepared pans filling ½ - ¾ full. Bake about 18 to 20 minutes, or until a toothpick inserted in the center comes out clean.
  4. Cool in pan on rack for 5 minutes, then remove from pan and let cool completely before frosting. Combine all frosting ingredients except vanilla extract and place over a double boiler. Beat with electric mixer for 7-10 minutes, or until mixture will stand in stiff peaks. Beat in 1 teaspoon vanilla extract.
