Recipe: The Best Vanilla Cupcakes
Makes 24 cupcakes
Ingredients:
12 tablespoons (1½ sticks) unsalted butter, softened
1½ cups sugar
2 cups all purpose flour
1½ teaspoons baking powder
¼ teaspoon salt
6 large egg whites (3/4 cup)
¾ cup milk
1 teaspoon vanilla extract
Frosting:
2 Egg Whites
1½ Cups Sugar
1/8 tsp salt
1/3 cup water
2 tsp light corn syrup
1 tsp vanilla extract
Method:
- Preheat to 350 degrees. Butter or line cupcakes pans.
- In a large bowl, beat butter and sugar for about 5 minutes, until light and fluffy. Stir together flour, baking powder and salt. Set aside. Combine egg whites, milk and vanilla extract. Add 1/3 of the flour mixture to the butter mixture then add half the milk mixture. Continue to alternate beginning and ending with flour mixture. Scrape the bowl and beater often.
- Pour the batter into prepared pans filling ½ - ¾ full. Bake about 18 to 20 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan on rack for 5 minutes, then remove from pan and let cool completely before frosting. Combine all frosting ingredients except vanilla extract and place over a double boiler. Beat with electric mixer for 7-10 minutes, or until mixture will stand in stiff peaks. Beat in 1 teaspoon vanilla extract.
