Culinary Skills
Now Available with Chef Jason Aili on Sunday Evenings

If your dreams of becoming a spectacular home cook, personal chef, or bed & breakfast owner have been on the back burner, now is your opportunity to turn the flame on high and move that dream forward. Ignite your passion with CSR's 20-week Culinary Skills course designed for individuals who are passionate about food and cooking and committed to discovering and learning new methods and techniques.

Working side-by-side with our Professional Chef Instructor, Chef Jason Aili, students will spend 4½ hours, one evening a week (90 hours total) in our professionally equipped commercial teaching kitchen. Explore a logical sequence of topics, including professional knife skills, sensory awareness, stocks and soups, sauces, vegetables, fish, poultry, meats, wine and cheeses.

Culinary Skills begins Sunday, January 6, 2008 and runs Sunday evenings through June 1st. Tuition is $2,225. Enrollment requirements: Completion of Knife Skills and Basic Cooking Techniques or similar courses highly recommended.

Recipe: Cape Cod Cranberry Cornbread
For a delicious weeknight warm-up, try this quick holiday cornbread.

Ingredients:

1 cup yellow cornmeal
1 cup all purpose flour
½ cup brown sugar, firmly packed
1 cup buttermilk
6 Tbs. butter or margarine, melted (¾ stick)
1 egg, slightly beaten
2½ tsp. baking powder
¼ tsp. salt
1 cup fresh cranberries, coarsely chopped
1 cup chopped walnuts

Method:

  1. Preheat oven to 400°F.
  2. Gently blend all ingredients except walnuts in a mixing bowl with a fork or rubber spatula.
  3. Spread into a greased 9" square pan. Sprinkle with walnuts.
  4. Bake 25 minutes or until toothpick inserted in center comes out clean.
  5. Serve warm.
