Recipe: Chocolate & Peppermint Crunch Crackles
Try this homemade mint-chocolaty way to say "happy holidays."

Makes about 36

Ingredients:

8 oz. semisweet chocolate, chopped
½ cup (1 stick) unsalted butter
1½ oz. unsweetened chocolate, chopped
½ cup finely crushed hard peppermint candies
6½ Tbs. sugar
3 large eggs
2 tsp. vanilla extract
1 tsp. peppermint extract
1½ cups all-purpose flour
¾ tsp. baking powder
¼ tsp. salt
½ cup (about 3 ounces) semisweet chocolate chips
Powdered sugar

Method:

  1. Combine first 3 ingredients in heavy large saucepan. Stir over low heat until chocolates melt and mixture is smooth. Remove from heat and mix in crushed mints and the sugar.
  2. Cool mixture to lukewarm, stirring occasionally, ~30 minutes. Whisk eggs into chocolate mixture, 1 at a time, then add vanilla and peppermint extract.
  3. In a small bowl, mix flour, baking powder, and salt. Whisk the flour mixture into the chocolate mixture, then stir in chocolate chips. Cover and chill until firm enough to shape.
  4. When ready to bake, preheat oven to 325°F. Line 2 baking sheets with parchment paper.
  5. Using a generous tablespoonful for each cookie, roll dough into 1¼"-diameter balls, then arrange on baking sheets 1" apart.
  6. Bake cookies until puffed and cracked on top but still soft to touch in center, about 11 minutes. Let cool 5 minutes.
  7. Roll tops of cookies in powdered sugar. Transfer to racks; cool completely.

How did the candy cane originate?

Answer:
During the 17th century, craftsmen created white sticks of candy in the shape of shepherds' crooks at the suggestion of the choirmaster at the Cologne Cathedral in Germany. The candy treats were given to children to keep them quiet during Nativity ceremonies, and the custom spread throughout Europe and beyond.
