Recipe: Orange Shortbread Cookies with Chocolate Chips
Taken from our Cookies For Grown-Ups class, these simple, scrumptious cookies will win smiles from eager eaters.

Makes about 20

This recipe calls for double chocolate chips, which have a deep, rich chocolate flavor because they are made with bittersweet chocolate. Regular semisweet chocolate chips can be substituted.

Ingredients:

1½ cups all-purpose flour
½ tsp. baking powder
½ tsp. salt
½ cup (1 stick) unsalted butter, room temperature
½ cup sugar
2 tsp. grated orange peel (packed down)
½ tsp. orange extract
1 large egg yolk
3 Tbs. whipping cream
8 oz. double chocolate chips (such as Ghirardelli)

Method:

  1. Position rack in center of oven; preheat to 350°F.
  2. Butter and flour a large baking sheet.
  3. Whisk the flour, baking powder, and salt in a medium bowl.
  4. In a large bowl, beat butter, sugar, orange peel, and orange extract until fluffy. Beat in egg yolk, then cream. Then add flour mixture and beat until the dough comes together in moist clumps. Stir in chocolate chips.
  5. Drop dough by generous tablespoonfuls onto the baking sheet, spacing about ¾" apart. Using moistened fingertips, flatten each to ½-inch thick round.
  6. Bake until cookies are golden, about 19 minutes. Transfer to a rack and cool. (Can be made 3 days ahead. Store airtight at room temperature.)

Food Trivia

Where were Toll House cookies first baked?

Answer:
In 1930, Mr. And Mrs. Wakefield purchased a Toll House located halfway between Boston and New Bedford, Massachusetts. Built in 1709, the house had long been a haven for weary travelers in search of food, drink and change of horses. In keeping with the Toll House tradition, Mrs. Wakefield baked cookies for guests at her Toll House Inn.
