Recipe: Brandied Pumpkin Pie with Ginger Whipped Cream
This recipe is one of Joan Brett's Thanksgiving classics.

Ingredients:

2 cups canned solid-pack pumpkin (or equivalent local fresh roasted and mashed pie pumpkins)
2/3 cup firmly packed light brown sugar
2 large eggs
1 1/3 cups evaporated milk
½ teaspoon salt
2 teaspoons cinnamon
½ teaspoon ginger
½ teaspoon cloves
¼ teaspoon freshly ground nutmeg
¼ cup Cognac or other fine brandy

Method:

  1. One 9" unbaked pie crust. Preheat oven to 425° F.
  2. In a large mixing bowl, whisk together pumpkin, evaporated milk, sugar, salt, eggs, spices, and brandy until well blended. Pour into pie shell.
  3. Bake at 425° F for 15 minutes. Reduce heat to 350° F and continue to bake for 45 minutes or until the filling is firm and an inserted knife or skewer comes out clean.

Ginger Whipped Cream
1 ½ cups heavy cream, well-chilled
3 tablespoons confectioners sugar
¾ teaspoon ground ginger

  1. Place bowl and whisk in the freezer for at least one hour.
  2. Place heavy cream (not ultra-pasteurized) into bowl and whisk until it just holds stiff peaks. (Alternatively, use Kitchen Aid).
  3. Add confectioner's sugar and ground ginger. Beat the mixture until it holds stiff peaks.
  4. Serve the pie after it has cooled. Garnish with Ginger Whipped Cream or serve it on the side.

Why do we eat pumpkin pie at Thanksgiving?

Answer:
In 1621, at the first Thanksgiving celebrated by the Pilgrims to give thanks for their first successful harvest, they ate a pumpkin custard flavored with maple syrup and spices baked in pumpkin shells. The beloved Thanksgiving pumpkin pie evolved from this treat.
