Recipe: Harvest Apple & Goat Cheese Tart

Make use of the delicious apples coming into season with this sweet and savory treat.

Recipe adapted from Bon Appetit
Serves 8

Ingredients for Dough:
(Makes enough dough for 2 tarts – freeze one for later)
12 oz. all-purpose flour
1 tsp. salt
6 oz. unsalted butter, cold and cut into bits
5-8 Tbsp chilled water
2 tsp. white vinegar


For Filling:
1 egg, lightly whipped
6 ounces soft fresh goat cheese (about ¾ cup packed)
2 tsp fresh lemon juice
1 tsp fresh lime juice
¼ tsp coarse kosher salt
3 medium Gala or Honeycrisp apples, peeled, quartered, cored, cut into 1/8-inch-thick slices
3 Tbsp unsalted butter, melted
¾ cup honey, divided
¼ tsp ground allspice
¾ tsp cinnamon

Method
  1. Place flour and salt in a bowl. Add butter and work quickly to blend until the mixture resembles small peas.
  2. Add vinegar and 5 Tbsp water all at once, working together with your fingers. Add more water, ½ Tbsp at a time, until it begins to clump together. You can also do this in a food processor.
  3. Form into 2 disks, wrap in plastic and refrigerate 30 minutes to 2 hours. One of them can be frozen for later use.
  4. Roll out one disk of dough, place in a tart pan and chill again.
  5. Preheat oven to 375°F. Mix cheese, lemon and lime juice, and salt in bowl; spread mixture inside chilled pastry. Overlap apple slices atop cheese. Mix butter and ¼ cup honey in small bowl; brush over apples. Sprinkle with allspice and cinnamon. Bake until apples are tender and pastry is golden, about 35 minutes. Let the tart cool a bit and drizzle 1 tablespoon honey over. Serve warm or at room temperature.
