Culinary Skills
Now Available on Sunday Evenings

If your dreams of becoming a spectacular home cook, personal chef, or bed & breakfast owner have been on the back burner, now is your opportunity to turn the flame on high and move that dream forward. Ignite your passion with CSR's 20-week Culinary Skills course designed for individuals who are passionate about food and cooking and committed to discovering and learning new methods and techniques.

Working side-by-side with our Professional Chef Instructor, students will spend 4-1/2 hours, one evening a week (90 hours total) in our professionally equipped commercial teaching kitchen. Explore a logical sequence of topics, including professional knife skills, sensory awareness, stocks and soups, sauces, vegetables, fish, poultry, meats, wine and cheeses.

Culinary Skills begins Sunday, January 6, 2008. Tuition is $2,225.
Enrollment requirements: Completion of Knife Skills and Basic Cooking Techniques or similar courses highly recommended.

Recipe: Apple Betty
The last market of the Boulder County Farmers' Market season is this Saturday. Stop by our booth to pick up free recipes, try seasonal samples and gather advice for cooking with ingredients fresh from the market.

Ingredients:

10 apples (firm, tart apples preferably)
1 ½ cups plus 3 Tbs. sugar
1 cup plus 2 Tbs. flour
½ cup walnuts
1 stick butter
2 Tbs. cinnamon
pinch of salt

Method:

  1. Peel and core the apples. Slice thinly.
  2. Toss with 3 Tbs. sugar, 2 Tbs. flour and 1 Tbs. cinnamon in a medium sized casserole dish.
  3. In a separate bowl combine the rest of the flour, sugar, cinnamon, salt and walnuts.
  4. Cut in the cold butter until the mixture resembles course crumbs.
  5. Top the apples with the flour mixture.
  6. Bake at 350 for about an hour or until the apples are tender and the liquid is bubbling.
