Recipe: Perfect Roasted Garlic Chicken
Serves 4

Ingredients:

2 heads garlic
¼ cup chopped fresh herbs (thyme, rosemary, parsley, basil, etc.) OR
2 tsp. dried herbs (same assortment)
3 Tbs. butter, softened
4 chicken breasts OR 1 fryer
Salt, pepper & olive oil

Method:

  1. Preheat oven to 350° F.
  2. Remove papery portion of garlic. Slice off about ¼" of top of garlic. Place garlic in a small baking dish or aluminum foil. Drizzle olive oil over garlic to coat. Wrap up or cover and bake until garlic is very soft and golden — about 1 hr to 1 hr 30 min.
  3. Remove garlic cloves from heads. Squeeze garlic out of each clove into a small bowl. Add butter and herbs and mash to form a smooth paste. Season to taste with salt and pepper.
  4. Increase oven temperature to 375° F.
  5. Choose either whole chicken or chicken breasts.
  6. Loosen the skin by creating a space under the chicken skin. Insert fingers under skin and on top of meat. Be gentle and careful not to tear the skin. Place garlic mixture under skin and press gently.
  7. Season chicken with salt and pepper.
  8. Place on a rack in a pan and put in oven.
  9. Bake until golden and temperature is 165° internally.
  10. Remove from oven and let rest for 5 – 10 minutes.
  11. Carve, if appropriate, and serve.
