Five-Week Farm to Table Externship Schedule

Ten Days in the North Fork Valley

Classmates are divided into small groups and have the opportunity to participate in some of the following activities. All days are subject to change dependent on weather, events and the needs of the farmers, ranchers and producers.

  • Work directly and hands-on with farmers, ranchers, and growers
  • Experience the passion and commitment family farmers and ranchers have for integrative, sustainable farming practices
  • Tend to and work with farm animals and livestock
  • Prepare meals with chef instructor and local guest chefs using fresh, locally harvested products
  • Visit wineries in Colorado's emerging wine country
  • Spend a day with a farmer at local farmers' markets, such as the Crested Butte Farmers' Market
  • Experience the perhaps unsettling, but ultimately enlightening opportunity to witness a lamb being slaughtered
  • Prepare, age and roast the lamb with freshly harvested vegetables and herbs
  • Create a multi-course feast for 100 guests on a farm setting

Six Days in Boulder County

Classmates are divided into small groups and have the opportunity to participate in some of the following activities. All days are subject to change dependent on weather, events and the needs of the farmers, ranchers and producers.

  • Work directly and hands-on with farmers, ranchers, and growers
  • Learn seasonal produce and vegetable production and sustainable farming practices
  • Study seeding, seed transplanting, row planting, and hoop house and green house practices
  • Harvest produce for CSA's and farmers' market
  • Spend a day with a farmer at local farmers' markets in Boulder County

Nine Day Apprenticeship

  • Work in one of Colorado's finest restaurants, where each chef has a longstanding commitment to working directly with farmers and purchasing as much local product as possible
