Five-Week Farm to Table Externship Schedule
Ten Days in the North Fork Valley
- You and your classmates are divided into four small groups, each with its own focus farming, wine-making, or animal husbandry.
- Work half the day in your small group with your host farmer.
- In the late afternoon/evening, the whole class led by instructors and local chefs cook together using the freshly harvested products.
- You spend one day with your small group and host farmer at the Telluride Farmers Market.
- You will have the perhaps unsettling, but ultimately enlightening opportunity to witness a lamb being slaughtered.
- The lamb will be hung overnight and slowly cooked the next day with freshly picked vegetables and herbs, resulting in a true feast for CSR, staff, local chefs, and other special guests.
Six Days in Boulder County
- Back into small groups to work on one of four local farms.
- Work half the day in your small group with your host farmer.
- In the late afternoon/evening, the whole class cooks with a local caterer using the freshly harvested products.
- You spend one day with your small group and host farmer at the Boulder County Farmers Market.
Two Evenings of Fine Dining
- You and your class dine at two renowned chef-run restaurants.
- Restaurant Six89, owned by Chef Mark Fischer in Carbondale, Colorado
Chef Fischer believes in the synergy of uniting local product at its peak (a steady flow of small-scale growers and distributors are always at the restaurant's back door) with classically based technique and high art.
- Black Cat Restaurant, owned by Chef Eric Skokan in Boulder, Colorado
Chef Skokan's menu is a collection of inspirations that weave together the themes of locality, seasonality, wine pairing, palate, composition, design and taste.
Nine Day Apprenticeship
- Work in one of Colorado's finest restaurants, where each chef has a longstanding commitment to working directly with farmers and purchasing as much local product as possible.
- Partner chefs include Ryan Hardy of The Little Nell Restaurant in Aspen, and in Boulder County Lachlan McKinnon-Patterson of Frasca, John Platt of Q's Restaurant in the Boulderado Hotel, and Scott Claggett of Sobo American Bistro.

Grand Finale Community Harvest Dinner
- Celebrate the culmination of your Farm to Table Externship with a dinner "in the fields".
- You and your classmates invite farmers, chefs, and other special guests to an incredible seasonal feast demonstrating your new found knowledge and cooking skills.
