Culinary School of the Rockies purposefully chooses not to operate a student-run restaurant. Rather, we believe that the intense, hands-on learning taking place every day in the teaching kitchen is better. We do recognize the value of serving the public. Here's how we do it differently.
Real life experiences — two events — two formats
The Culinary Gala is your class showcase. You design, organize, prepare and serve a lavish, formal dinner for 150 paying guests over three nights.
The Graduation Celebration is an opportunity for you and your classmates to create a fabulous high-end buffet for your friends and family.
Culinary Gala The Culinary Gala is a great opportunity for you and your classmates to spotlight your talents. You participate in a multidimensional planning process, including theme, menu, cooking methods, plate presentations, wine selections, table setting, room layout, service, timing, audience, and budget. Using Culinary School of the Rockies' "System of Creation", you produce several iterations of each menu item and various plate presentations. This exercise teaches you the logical steps necessary to create menus.

Culinary Graduation Celebration For this event, the creation process is similar to the Gala. The format is buffet-style, an important distinction. You learn how to arrange and plate platters, cook quantities in advance, and style the buffet table. This event is less formal, and allows time for you to mingle with your friends and family.
