Culinary Arts Program Details
Colorado Farm to Table Externship During the Farm to Table Externship you will taste the flavors of Colorado, go behind the scenes and work side-by-side with farmers and artisans in the North Fork Valley and Boulder County. Participate in a 9 shift stage in some of Colorado's finest restaurants whose chefs purchase directly from local family farmers.

Rich and Varied Curriculum
Culinary Art's curriculum takes a purposeful approach, teaching a full menu each day. Our daily menus typically include bread; an appetizer; soup or salad; a main protein with sauce, vegetable, and starch; and dessert. Menus increase in complexity as the weeks go by. Your culinary skills and understanding develop quickly and build over time.

Hands-On Learning The best way to learn is by doing. Eighty percent of Culinary Arts is hands-on. Through repetition and in-depth coaching and mentoring, Culinary Arts builds fundamental skills and techniques, and motivates you to make them your own.
With guidance from your Chef Instructor, you cook every day, working side-by-side with fellow students to prepare a complete meal. Other programs stop at techniques. In Culinary Arts you reach the next level by developing style, aroma, composition, and presentation. You dine each day; tasting the day's results allows you to refine your cooking and appreciate what it takes to create great food.

Kitchen Management Teamwork and management skills, critical key components of the hospitality industry, are built into the Culinary Arts curriculum. Students tackle a different management or teamwork position each week. You rotate weekly through standard kitchen stations and experience first-hand the responsibilities associated with each role.
